The natural habitat for olive trees is anywhere along the
Mediterranean coasts. The natives though realized that if the trees are planted inland the quality of the oil is much higher
and consequently imported the trees into Chianti. For this reason it’s no secret that the highest quality oils are produced on the rolling hills in central Tuscany.
The trees here suffer the rigid winters and occasionally killer frosts that in the
last century occurred for the last time in 1985. Since it takes at least 80 years for an olive tree to reach full maturity
you realize why Chianti olive oil production is extremely low.
Most farmers in Chianti cultivate olives without the idea of making a cash profit but simply to have oil for personal use to
consume during the year. I have managed through my contacts to select a local farm to keep some of their “green gold” for
which I will be happy to distribute to real olive oil connoisseurs.
I guarantee that the oil is the result of strictly selected olives produced exclusively from local hand picked olives unlike
the majority of the so-called Tuscan oils that are blended. To consume extra virgin olive oil at its best it’s very important
to consume it young. Our goal is to ship a very fresh product, so fresh that I guarantee that the oil I deliver directly to
your doorstep originates from olives that where still dangling on the trees just a few days before!
